Delicious bowl of The Foodist: Poor Man’s Pate with fresh bread

Winter is here and it is cold! It is definitely time for a rich and hearty, homemade cream of mushroom soup. It is rich, thick, and filling and loaded on a piece of homemade toasted bread and homemade butter it is divine!

INGREDIENTS

  • 1 Cup Mushrooms 

  • Medium Onion chopped

  • Tsp Garlic

  • 2 Tbsp Butter

  • 2 Tbsp Plain flour

  • 1 cup Vegetable stock

  • 3/4 cup Milk

  • 1/4 cup simple cream

  • Black pepper

  • Salt

DIRECTIONS

  1. Melt the butter in a large pan and add in the onions and fry until starting to soften. Stir in the garlic and cook on until the onions are soft. Add the mushrooms, continue to cook until the mushrooms are soft.

  2.   Sprinkle in the flour and mix well, cook on medium high for a minute. Slowly add the vegetable stock and keep stirring all the time to remove any lumps.

  3.   Then stir in the milk, mix well, bring to the bubble then reduce the heat and simmer for a minute.

  4.   Leave in the pan or pour into a container to allow for blending the mix.

  5.   Return to the pan on a low heat and stir in the cream.

  6.   Add salt and pepper to taste, gently heat through and serve up.
