The Foodist: Stewed Zucchini in Sage

This is a delight. The zuchinni gets sweated by the salt and sage and then fried in the butter. A truly flavorful side dish!

INGREDIENTS

  • 3 lbs zucchini thick sliced and small

  • 1 small onion diced

  • 1 sprig of fresh sage

  • 4 cups chicken broth

  • 1 tsp dried thyme or

  • 1 sprig fresh thyme

  • 1 Tbsp butter

  • 1 Tbsp sage infused olive oil

  • 1 Tbsp duck fat

  • salt and pepper

DIRECTIONS

  1. In a 2 or 3 quart pan sautee onions, sage and thyme in oil and butter.

  2. Soften onions, add zucchini and broth

    1. For vegetarian option use vegetable broth, substitute butter for duck fat.

  3. Cook over medium heat for 30 minutes, stir occassially.

  4. Add salt and pepper to taste.
